Keto Spinach Artichoke Dip (CROCK POT)

My yummy keto spinach artichoke dip made in the crockpot contains super simple ingredients and is amazingly low in carbs. This keto spinach dip will be a hit at your next event.

Ingredients Needed in our Recipe

Onion.

Tips on buying.

Onions should be very firm. Do NOT buy sprouting onions.

Storage.

Surprisingly, onions can be stored in the refrigerator OR in a cool, dark spot. Onions last for weeks so feel comfortable buying these in bulk if they are an amazing price.

Cutting an onion.

Make sure to use a SHARP knife when cutting an onion.

Frozen Spinach.

For those who know me personally, I am BIG on purchasing frozen vegetables. Make sure to ALWAYS purchase PLAIN frozen vegetables. Do a quick check of the ingredients to make sure no WEIRD sauces have been added. Plain is always better.

Artichoke Hearts (canned).

While many folks will frown when I use canned artichoke hearts, I follow the same rule as when buying frozen vegetables. Do a quick check of the ingredients on the label to make sure nothing extra has been added.

Cream Cheese.

Sour Cream.

Shredded Mozzarella Cheese.

Salt (or Seasoning of Choice)

As always, my favorite brand of salt is Redmond Real Salt, but please feel free to use the seasoning of your choice.

Parm Crisp, Whisp, High Key Crackers, or Other Keto Cracker.

This is where things can get a little complicated. Dips are FABULOUS, but what we use as our ‘chip’ can often be high carb. In the last few years, I have found some fabulous low carb chips including Parm Crisp, Whisp, and High Key Crackers. I have found Parm Crisp and Whips at Wal-Mart and High Key Crackers at Target and Drug Emporium.

How to Make Crock Pot Keto Spinach Artichoke Dip.

Combine all ingredients (except chips) in a crockpot.

Cover and cook on low for 2-3 hours.

Serve with Parm Crisp, Whisp, High Key Crackers, or other keto crackers.

What Crock Pot did you use?

My crock pot is super basic! I have a super simple Programmable Crock Pot that lives on my counter!

I Don’t Own a Crock Pot. What can I do?

You can easily transfer this recipe to the oven. Combine all ingredients in a large casserole dish and cook at 350 degrees for 25-35 minutes.

How to Store Leftovers?

Leftovers? You probably won’t have any! I am super serious! Store in a tightly sealed container in the refrigerator.

Can I Freeze this Recipe?

Technically, you can freeze any recipe, but personally, I would not. Freezing dip just seems a little bizarre to me. But again, if you freeze, be sure to use a proper freezer bag. It should last 2-3 months.

How Long Does it Take to Reheat?

Since this is an appetizer, I just can’t imagine placing it back in the crockpot. I would grab a small saucepan and heat over low heat. 

What Can I Do with Leftovers?

Again, you probably will not have leftovers! Sounds strange, but I LOVE to put this on top of a Mission Carb Balance Wrap (I love the cauliflower wraps since they are gluten free). Place the PLAIN wrap in the oven (400 degrees) for 10 minutes. Remove the wrap. Spread the leftover keto spinach dip on the wrap. Place back in the oven for 5 minutes. AMAZE!

FAQ.

What are the carbs in spinach artichoke dip?

My dip has 2 grams of carbs. PLEASE remember to add the carbs of the ‘chip’ that you will be using to dip!

What are the net carbs in our dip?

Net carbs are calculated as total carbs – dietary fiber. 

2 grams of carbs – 0 grams of fiber = 2 grams of net carbs.

Is spinach keto?

Spinach is one of my favorite vegetables to recommend to my patients on a low carb plan or keto plan. One cup of spinach contains 1.1 g of total carbs and 0.4 g of net carbs. Bring this veggie in your life!

Is artichoke keto?

Artichoke is a little tricky. Artichoke is a vegetable that is VERY high in fiber. 1 medium artichoke is 14 grams of carbs. DO NOT PANIC! This high fiber vegetable has 10 grams of fiber. Net carbs equals 4 grams. 

I don’t like sour cream, what can I do?

You can replace the same amount with mayonnaise.

Can I use fresh spinach?

Sure! Stir in at the very end. If not (in other words if you put in with all the ingredients) the spinach will turn a funky green color.

This recipe seems a little bland. Can I add other seasonings?

Yes and yes! Please remember, I give you all a base recipe. Please please feel free to use your FAVORITE seasonings and spices.

A serving of our recipe is 2 tbsp to ¼ cup.

Ingredients
  

  • 1/2 onion chopped
  • 10 oz spinach frozen
  • 2 14 oz aritchoke hearts 2 cans
  • 1 8 oz cream cheese
  • 1/2 cup sour cream
  • 2 cups mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 2 tsp salt Redmond Real Salt

Instructions
 

  • Combine all ingredients in crock pot.
  • Cover and cook on low for 2-3 hours.
  • Serve with Keto Approved Chips (Parm Crisp, Whisp, or High Key Crackers)
